While shopping at a department store one day last spring, I noticed quesadilla makers. They were inexpensive and so exciting—I was getting all sorts of ideas just looking at the box. A purchase was imminent.

I ended up taking two home with me and they are both going strong almost one year later. I must admit I’m a sucker for kitchen gadgets, but these little grills have been one of my best indulgences. They have paid for themselves over and over (if you have ever tried to flip a quesadilla in a frying pan, you know what I mean).

I use our quesadilla makers at least once a week at the inn, and have fed 28 people breakfast with these two babies. I occasionally use them for happy hour snacks, but it is the following breakfast recipe that gets the most raves. Enjoy!

Addison’s Breakfast Quesadillas
(recipe the Addison on Amelia Island Bed & Breakfast Inn)
- 1 (16 ounce) package ground pork sausage
- 1 medium sweet onion, chopped
- 1 large red or yellow bell pepper, diced (or 1/2 of each color)
- 6 flour tortillas
- 9 large eggs
- 1 cup shredded Mexican 4 cheese blend
- salsa
Add sausage to a large frying pan and cook over medium heat. Break up the sausage as it cooks, adding the onion about half way through the cooking process. Stir often. When fully cooked, stir in the chopped bell pepper. In a separate pan, scramble the eggs, being careful not to overcook.
Heat the quesadilla maker and when ready, spray lightly with non-stick cooking spray. Place one tortilla on the grill plate; spread about one third of the meat mixture over the tortilla, then the equivalent of 3 scrambled eggs over the meat. Top with about one quarter cup (or more) of the cheese and place another tortilla shell on top. Close the quesadilla maker and allow to cook for a few minutes. I like the tortilla shells to become a golden brown and for the cheese to be completely melted. Remove the quesadilla to a cutting board and cut into quarters.
Each complete tortilla serves two (two quarter slices each), and this recipe will serve six. Serve quesadillas with salsa and home fried potatoes.

Okay those are adorable.
I don’t own a quesadilla maker myself (much less 2)—looks like I’m going to have to make a run down to Amelia Island and stay a night or two (or week) at the Addison to indulge my craving. (Besides, it would give me a good excuse to enjoy some 60, 70 & 80 degree weather over this cold, cold winter!)
Sounds like a great way to start the day to me (and it reminds me of one of my favorite breakfast items: huevos rancheros)
I had to giggle at the quesadilla-maker gadget. We make loads of quesadillas around here in SoCal but I’ve never used a quesadilla maker! I guess that makes it easier, especially if you’re feeding loads of people. Looks yummy!
I am DEFINITELY going to be trying these on our guests here at the Aska Lodge B&B…and YES I’m craving some of those quesadilla makers also! Santa did bring me an actual panini press, so my panini’s are looking much better. Kitchen gadgets are SO MUCH fun! (just got to find the room for all of them…)
that’s one heck of a thick quesadilla, and i like it. it’s full of everything that makes breakfast breakfast.
Oh my gosh, I did not know that there was such a thing as a quesadilla maker. My kids would just love something like that! They love to make their own breakfast before school, lucky me. This would be a great recipe to have made up ahead of time and have ready for a quick breakfast. Thanks!
