Wednesday InnSider: The Aska Lodge (Recipe: Nutella Pancakes with Caramelized Bananas)

With Valentine’s Day just around the corner, love is definitely in the air at the Aska Lodge Bed & Breakfast. Our quiet and serene mountain atmosphere will have you relaxing in no time. If you’re lucky enough to reserve the Jessica Lynn room (featuring a lovely, king-sized canopy bed), chances are you’ll be sleeping-in late. Many guests have reported this room’s comfort factor makes it hard to leave.

Perhaps a long soak in this room’s jacuzzi tub, complete with candles and bubble bath, will be just what you need to appreciate the romance in your life. For fun, we’ve been trying our hands at towel origami, so who knows what intriguing shapes will await you when you’re done with your bath!

fireplace-main-aska-lodge A snuggle by the fireplace in our gathering room has also proven very popular among guests, made even better when accompanied by a toasty mug of hot chocolate and a few cookies from our bottomless cookie jar.

The romantic atmosphere surrounding our lodge has encouraged us to offer elopement packages starting this year. We are in the process of constructing an outdoor wedding arbor, handmade with wood and vines harvested from our property. It’s just about finished, and its hillside location with incredible mountain view will be the perfect spot to say, “I do” to that someone special.

Speaking of special, what could be more romantic than luscious hazelnut chocolate, especially when it’s served for breakfast? These Nutella Pancakes with Caramelized Bananas have become a guest favorite. If you’ve never tried this delightful hazelnut chocolate spread, here is your chance to indulge. But beware—this breakfast can become addictive! One bite of these pancakes and we think you’ll agree.

  • 2 eggs
  • 1/2 cup Nutella
  • 1 & 1/2 cups milk
  • 1 tablespoon oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons butter
  • 1 cup sugar
  • 4 bananas, sliced
  • 1/4 cup maple syrup

Whisk eggs in a bowl with Nutella until smooth; add milk and oil, whisking until combined. In a separate bowl, mix flour and baking powder. Add egg mixture to dry ingredients; allow batter to rest for 5 minutes. Spoon batter onto hot griddle; cook both sides until golden brown. In the meantime, make topping by melting butter in skillet over medium heat; add sugar and cook, stirring until mixture becomes slightly browned—watch carefully so as not to burn. Add bananas, cooking until softened, about 2 minutes. Add maple syrup and bring to a boil. Remove from heat and spoon onto pancakes. If desired, serve with extra maple syrup on the side.

Yield: approximately 15 pancakes.

caramelized bananas would be great on any pancakes (heck, even on their own), but they’d be PERFECT for nutella ones. delightful and divine!

Where do I sign? I love the pic in front of the fireplace, it looks so cozy and inviting. And the combination of nutella pancakes and caramelised bananas…yum! Who could resist?

I just noticed a misprint in the recipe…should be 2 TEASPOONS of baking powder, not tablespoons! Makes a big difference!

Mary Jo – Misprint fixed—the recipe stands corrected. Thanks for bringing this error to my attention. (I’m afraid 2 tablespoons of baking powder might have made for some fluffy, off-tasting pancakes!)
