Best Bet Breakfast Bread & Exciting New Features! (Recipe: Strawberry Creek Inn’s Whole Wheat Dried-Berry Scones)

I’m excited to share this post for a number of reasons:

  1. It’s my honor to introduce you to the one of the tastiest, most fool-proof scone recipes I’ve ever had the pleasure of making
  2. With this post, printable recipe pages are finally a reality on Inn Cuisine (yes!), and
  3. My bravery is at an all time high—I’m including my first-ever, self-produced, how-to video on shaping & cutting scones (blame it on my obsession with the Flip MinoHD)

Now, that’s a lot of news! But first, scones sweet scones…

Making an appearance in Strawberry Creek Inn’s upcoming cookbook, these Whole Wheat Dried-Berry Scones are the epitome of yummy breakfast bread. Packed with wholesome ingredients, featuring an easy-to-follow recipe, and embodying a flavor and texture that give rise to the ideal scone, it is my sincerest hope you’ll try this recipe in your own home or inn.

If you’ve never eaten a scone before, you’re in for a special treat. And for those of you who have (even if you didn’t enjoy the experience previously), I urge you give this version a try. Effectively blurring the lines between moist and dense, these scones have a medium crumb and are absolutely perfect for pairing with morning coffee and afternoon tea. Made with an assortment of dried berries and whole wheat pastry flour, these scones let you enjoy breakfast bread without the added, caloric guilt that often accompanies sweet rolls, donuts and decadent coffee cakes.

As a specialĀ  bonus for those of you yet unacquainted with scones (or those needing a refresher course), I am including my first-ever, how-to video on basic, scone shaping & cutting techniques. Making scones is really quite fun, and I hope you enjoy this self-produced video.

Strawberry Creek Inn’s Whole Wheat Dried-Berry Scones

(featured on Inn Cuisine, adapted from Strawberry Creek Inn’s upcoming cookbook, due out 2010)

Yield: 8 scones

Dry Ingredients

  • 2 cups whole wheat pastry flour
  • 1/3 cup granulated sugar
  • 3/4 teaspoon kosher salt
  • 2 teaspoons baking powder
  • zest of 2 small lemons (or 1 large)
  • 1/2 cup dried fruit (any mix of cranberries, cherries, blueberries or raisins)
  • 3/4 slivered almonds
  • all-purpose flour for dusting

Wet Ingredients

  • 3/4 stick frozen unsalted butter
  • 2 large eggs
  • 1/2 tablespoon pure vanilla extract
  • 3/4 cup heavy cream

    I’ve never baked scones before and found your video helpful. You make it look so easy that I plan on giving this recipe a try. Also, I really appreciate the printable recipe page with this. It will be nice to keep a printed page nearby for reference.
