When we do venture outside the inn, to take care of the ranch and feed the buffalo, nothing warms us up quite like a steaming bowl of Jack’s Chipotle Corn Bisque. Be sure to try this delicious soup at home, but don’t forget to come on out and visit us as well. We would love to share with you our Kansas winters on the plain!

Chipotle Corn Bisque
(recipe courtesy the Circle S Ranch & Inn)
- 1 (14 & 1/2 ounce) can crushed tomatoes
- 1 (14 & 1/2 ounce) can diced tomatoes
- 1 cup heavy cream
- 1 onion
- 3 stalks of celery, diced
- 1/2 stick butter
- 2 chipotle peppers in adobo sauce
- 2 cups milk
- 1 cup chicken stock
- 4 tablespoons ancho chili powder
- 1 tablespoon thyme
- 4 cloves garlic, minced
- 1 cup white wine
- 4 bay leaves
- 1 to 2 cups frozen corn
- pinch white pepper
- pinch paprika
- 3 potatoes, peeled and diced
- cornstarch to thicken
- optional addition of shredded pork, beef or chicken
Puree chipotle peppers in a cup of chicken stock. Combine with remaining ingredients in a large stock pot, and bring to a boil for 20 minutes. Thicken to desired consistency with a medium brown rue or cornstarch, and serve.

That bisque sounds lovely. Interesting they don’t use rice as thickener as is traditional for bisques. I’m sure the flavor is out of this world.
i love bisques (helloooo cream!) and i love corn and chipotle is a magic word for me. even with the extensive list of ingredients, this is definitely something i’d like to make. and eat. early and often.
I could definitely use a hot stone massage. Might make the snow outside more a tolerable. That and a bowl of your bisque and I think I’ll be alright
