How do you feel about bacon? Love it? Hate it? Feel like you could take it or leave it?
Would you be interested in an extremely easy way to spice up breakfast and put an end to your boring bacon blues?
Creating oven-baked, caramelized bacon is a cinch and a welcome change of pace from traditional pan frying. Not only will it keep you from dodging painful oil splatters, it will provide both you and guests of your home or bed & breakfast inn with an unexpected burst of flavor and texture: a little sweet, a little spicy and a whole lot of crunchy and chewy. It’s an interesting combination to be sure!
The following recipe can be prepared up to 2 hours in advance and stored at room temperature in an airtight container. If you have any leftovers, save and use whole or crumbled in soups, sandwiches, salads and/or appetizers to be eaten later in the day. Enjoy!
Recipe: Sweet ‘n Spiced Up Caramelized Bacon
(recipe courtesy Inn Cuisine, as adapted from the Bon Appetit Cookbook, circa 2006)
- 1 pound of your favorite Bacon (do not use thick sliced)
- 1 cup firmly packed, golden Brown Sugar
- 1 teaspoon ground Red Pepper
Preheat oven to 375 degrees for baking.
Assembly
Combine packed brown sugar and ground red pepper in a shallow dish, mixing well. Add bacon strips one at a time, turning to coat each side completely with the sweet ‘n spicy mixture. When coated, transfer bacon strips to a large broiler pan or rack placed on lined, jelly roll pan.
Bake at 375 degrees for approximately 20 minutes, turning bacon once halfway through cooking time. When properly cooked, bacon should appear a dark, golden brown (not black) and firm. Do not burn. Remove to a wire rack to cool. Serve at room temperature.
Makes approximately 8 servings.

Ohh….Todd would love this post! The guy loves his bacon! It’s only about 5:30 am now , but I’ll go wake him up and tell him that a bacon breakfast is waiting for him at Inn Cuisine!
