I have a love/hate relationship with smoothies. When they are good, they are very good. But when they are bad… well, you know the rest of the story.
Delicate smoothie equilibrium lies somewhere in the balance of a smoothie’s flavor and a smoothie’s texture. The right flavor will leave you begging for more. The wrong texture will leave you pouring a blender of smoothies down the drain. What’s a cook, host and wannabe smoothie lover to do?
The answer: experiment. Experiment and sample as many smoothies as you possibly can. Start with flavors and textures that already appeal to you and build your repertoire from there. True, not every recipe will strike your palate and make you say, “Mmmm,” but the more smoothies you sample the more likely you are to discover flavor and texture combinations that strike your fancy.
That said, the following recipe for The Addison’s Peach-Berry Smoothie is a very good one. Refreshingly light with just a hint of sweetness, this smoothie has balance—it’s not too thick and not too runny.
Friends and dear cooks, I tell you, this IS a bit of smoothie heaven.
Recipe: The Addison’s Peach-Berry Smoothie
(recipe courtesy Bob and Shannon Tidball, owners, The Addison on Amelia Island)
- 1 & 1/2 cups vanilla yogurt (Shannon uses light or fat-free)
- 1 cup frozen mixed berries (Shannon uses organic)
- 1 large fresh peach, peeled and pitted
- 1 squirt of honey, about 1 teaspoon (again, Shannon uses organic)
- 1-1 & 1/2 cups of ice cubes
Place all ingredients in a blender that can crush ice and blend until smooth. The mixture should be the consistency of a milkshake. If too thick, add more yogurt. If too think, more ice.
This recipe serves 4-5.

I love the berry and peach combo, like a melba! Sounds delicious.
i don’t consume enough smoothies. they’re so refreshing and healthy and easy, so there’s really no excuse for my behavior.
I thought I was the only one with an aversion to smoothies…not that there’s anything wrong with smoothies….its just so many smoothies are done wrong and have a funny texture (too thick, not smooth enough, too watery, like a ground up sno cone, etc) or an off taste. This sounds like it would taste great and an endorsement for the texture certainly appeals to me!
You know, when I think of smoothies I always think of berries.. strawberries, blueberries, raspberries. I never have thought about doing peach in a smoothie! I can’t wait to give this recipe a try!

Grace – My excuse is that I’m still shopping for a sturdy, ice-crushing blender. Mine broke back on Cinco de Mayo while trying to blend frozen margaritas. When I finally replace it, these are first on the list.
