Yumm Sandie I love cooked apple in anything! I thought at first that these were poffertjes but then I saw the pictures and I don’t think I’ve seen these before. Thanks for sharing!

Could you use a combination of agave nectar and brown sugar substitute instead of the sugar in this recipe? That would take it out of the realm of the impossible for me, to the realm of the occasional treat.

Lorraine – German Pancakes are much larger than Poffertjes (even these individual-sized Dutch Babies would be larger). Now that you mention them, I ought to make the investment in an Aebleskiver/Poffertjes pan. I’m addicted to cast-iron skillets as it is, so why not add to my collection!

Mental P. Mama – How about the Bloody Marys & Mimosas?!

Lydia – As there’s only 3/4 cup brown sugar in the apple topping as-is, the end result is fairly sweet (according to my taste buds) and while I’m not diabetic, I think you could prepare this topping using less—reduced perhaps to about 1/2 cup brown sugar.

That said, since you have dietary concerns, why not experiment with 1/4 cup brown sugar & 1/4 cup honey or agave nectar and see how it turns out. I think the honey would be great, but I’ve not cooked much with the agave nectar so you’d have to try it first. I don’t suggest substituting any more than 1/4 to 1/3 cup of the brown sugar though—it really adds such a nice caramel-y dimension to the apple topping.

**Also, you could experiment with 1/4 cup Demerara or turbinado sugar, even artificial sweetener if you like, and add about a 1/4 cup molasses or maple syrup to create a version of brown sugar. I’ve not tried those combinations either, but they might work too—perhaps it’s time to call Alton Brown in on this one!

I have to laugh because I don’t even want to begin to count the amount of recipes I have messed up because I have been rushed/not paying attention/insert random excuse here.

I’m so glad I bought cast iron skillets…I can now yell ‘Yeah baby…Dutch Baby”!

Would I be too decadent in adding a scoop of vanilla ice cream here? I think not!

This is a lovely recipe! I first learn about Dutch babies a few months ago through an old cooking magazine that I always had. After trying it out, I thought to myself:”Where was I all these years, not knowing about this lovely recipe???!!” I baked these individually in an oven and I think it is a great breakfast/ brunch item to serve to guests.

I definitely need to try out the apple topping!
